At Ashcombe Estate Orchards we believe that the only way to make the best tasting cider is to let nature do the work - pure and simple.
We have 5 orchards, each of which produces it's own unique mix of apple varieties that we use to create our unique tasting ciders. We use traditional pruning methods to manage the orchards and under-graze so as to retain fertile soils but keep the pesky plants down.
We harvest all our apples using the time honoured method of picking by hand. Although labour intensive, for us it is the best way to ensure that the apples reach the press in the best condition possible. As a result the pressed juice is as pure as possible - therefore giving the Cider character and depth from the purest juice.
Pressing, fermenting and bottling
This is where we take over from nature and apply modern pressing and fermentation techniques to maximise the yield. Fermentation takes up to 6 weeks before we mature the cider for a further 3 months. Our blended ciders are then created by our expert tasters who use all of their extensive experience to create the right sweetness, depth of flavour and tannins of our finished ciders.

100 Years of History
The White family were the first to plant apple trees on the estate back in 1863. They produced cider as a family business supplying the farm workers on the estate and local towns and villages. The cider was transported latterly in the Whites cider van that became famous in the local area.
The Cider Van
Along with other products from the Estate, cider is experiencing a renaissance in production. Honey, Cream and other Ashcombe made products are now growing in their popularity thanks to the use of traditional methods and modern thinking.
